Festive Feasting The Complete Natural Way
We LOVE Christmas and eating nearly in equal measure, so this year we will be cracking open the mulled wine and getting our cheese board festive ready with some delicious treats!
Hey – we’ve been pretty good all year so we definitely deserve a bit of winter indulgence. It’s such a great time of year to celebrate and whether you are hosting family and friends on Christmas Day or throwing a drinks party for New Year, the key point is to enjoy! Here at The Complete Natural we work with lots of great chefs to bring you delicious recipes using the best of Irish ingredients.
If you are hosting a drinks party, why not whet people’s appetites with some interesting Christmas cocktails – a mulled wine cocktail with cinnamon, cloves, clementines and Cointreau – this classic red wine recipe is perfect for traditionalists. Why not try a Whiter Christmas cocktail – mix creamy coconut and vanilla vodka, then serve in mini milk bottles and garnish with chocolate wafer straws.
For some much-needed absorption, why not try some tasty canapés like Clodagh Mckenna’s Fresh Crab Toasts with Spicy Yogurt or you could whip up a simple Devil on Horseback – wrap a streaky slice of bacon around a prune on a cocktail stick, glaze with honey and bake for 20 minutes until golden brown. Yummo.
For delicious festive starters ahead of the Big Bird, why not really impress with an Irish Farmhouse Cheese Souffle using a yummy mature Irish cheddar cheese. Okay, we know hot souffles can be tricky, but this one is foolproof… seriously! A second starter to try is our really simple Chicken Liver Pate with Caramelized Onions, or you could try a cranberry jelly topping for a really festive twist.
For the main event, you might be having turkey or goose. If you are vegetarian there are many delicious alternatives. We always think “the trimmings” are the best part of the Christmas dinner anyhow, this year why not ring the changes with some really tasty side dishes. For a potato dish with a difference, we love Clodagh’s special dairy inspired sides – the Celeriac and Potato Gratin – thinly sliced potato and celeriac layered with cream, garlic and nutmeg, baked until golden brown and bubbling. Another favourite is the Irish Cheddar Cheese Cauliflower with hazelnut topping, sure to cause a stampede at the table!
To finish off your festive feast this year, we have created a range of deliciously decadent Christmas desserts from Chef and Stylist Nikki Walsh. For a change from traditional Christmas cake, Nikki has created a Snowy white chocolate, coconut and ginger cake, or who can resist a decadently delicious sticky toffee pudding with caramel cream sauce, finished off with lightly whipped cream! For a very pretty patisserie finish to your meal you could try the Christmas Pink and gold profiterole puffs with real gold leaf… surely an Instagram-worthy dish!
