SUPEREASY AND, WELL… SUPER-NATURAL

- 1 Place all of the ingredients in a serving bowl and mix well.
- 125g cooked quinoa
- 1 tbsp toasted nuts, such as pine nuts, cashews or flaked almonds
- 1 tbsp seeds
- ½ pomegranate, seeds removed to add
- Handful of leaves or raw vegetables, such as baby spinach or grated carrot
- Juice of ½ lime
- 1 tbsp extra virgin olive oil
- Handful of fresh mint, roughly chopped
- A pinch of sea salt
- 1 tbsp natural yogurt
- 25 g blue cheese
- A small handful of blueberries
